Coconut Macaroons

Posted on March 27, 2008

I make these gluten-free coconut macaroons all year round; when I retested it today, my younger son ate an entire baking sheet of these yummy little cookies!

Later than usual this year, my favorite spring holiday falls on April 19th, just over 3 weeks away. I especially enjoy the food traditions surrounding this holiday; during the next couple of weeks I will be posting all of my favorite Passover recipes.

These gluten free coconut macaroons are an ideal Pesach dessert because […]

A decadent dessert recipe that’s high protein, gluten free, dairy free and nut free.

Yes, I continue to roll out the coconut flour recipes. This time it’s gluten free Chocolate Cake. I am having a great time experimenting with this unique flour. Swanson is everyone’s favorite food blogger. Her recipes are revolutionary; she always thinks out of the box when she whips up a dish. While I sometimes find […]

I love gluten free granola; sweet and crunchy, it always satisfies a good snack attack.

I also get a kick out of using the term “granola” to ridicule my Boulder brethren. However, when I’m feeling earthy, dousing myself in patchouli (which my husband dislikes to no end) I can easily apply the term to myself –even though I’m more of a yuppie than a hippie. I guess that would make me a yippie.

Alas, I digress. Several years ago when I […]
