I’ve been on a gluten free Hamantaschen rampage the last few days and these are my latest and greatest. I’ll be serving them at today’s Purim party for my younger son’s Chavurah. We’re having 7 families over in a little while to celebrate Purim and the story of Esther.

These healthier gluten free brownies are the perfect Super Bowl snack. It really is Joy the Baker’s fault. I have been baking scones every day since I read her post for Orange and Dark Chocolate Buttermilk Scones. I knew I would have to make my own gluten free version. We had a huge snowstorm here last night and I made my family a batch of this warming Mexican Hot Chocolate. A hot drink is perfect for a cold day, and it’s even better when warming spices such as cinnamon, chili and cayenne are added.

I am digging this yummy Christmas Chocolate Bark. Studded with rich pistachios, tart dried cranberries, and speckled with coarse chunks of salt, it’s a winner.
I believe the ideas for this flavor combo came from the fabulous Alison. I think this bark would make a wonderful gift for the holidays. Just don’t eat too much of it, as it’s very addictive.

So all you agave haters gather round. These gluten free chocolate chip cookies are completely free of agave, I have used yacon instead.
What is yacon? It is a perennial root, composed primarily of water and Fructooligosaccharide (FOS). These short chain sugars have a lower caloric value (as they are digested anaerobically) and high fiber content. FOS is a prebiotic that is extremely helpful with digestion.

I thought these gluten free Peanut Butter Chocolate Chip Cupcakes would be a breeze to make. I was wrong. A dozen batches later, here is the recipe.
Peanut Butter Chocolate Chip Cupcakes
½ cup creamy peanut butter (unsalted)
½ cup agave nectar or honey
¼ teaspoon celtic sea salt
¼ teaspoon baking soda

This chocolate “dirt” is perfect for dusting cakes and cupcakes. It’s made from one simple ingredient –chocolate chunks and super easy to prepare.
I recently used this dirt to dust the Whipped Cream Frosting on my Banana Cream Pie Cupcakes.
1 handful chocolate chunks
Place chips in a coffee grinder
Grind until the texture of coarse sand

I’m slightly obsessed with Mounds and Almond Joy this week. I’ve been making tons of coconut, chocolate and almond recipes the last few days.
