Yesterday was the last day of school for the boys and their friends and we all celebrated on our porch with these fun and festive cupcakes. Super easy to make and even easier to eat, the boys made a big mess –their faces were covered in yummy deliciousness in the mid day heat. I thought these gluten free Peanut Butter Chocolate Chip Cupcakes would be a breeze to make. I was wrong. A dozen batches later, here is the recipe.
Peanut Butter Chocolate Chip Cupcakes
½ cup creamy peanut butter (unsalted)
½ cup agave nectar or honey
¼ teaspoon celtic sea salt
¼ teaspoon baking soda
½ cup roasted peanuts (unsalted), chopped
½ cup chocolate chunks
In a large bowl, with a hand blender, mix peanut butter, agave and eggs until creamy

I’ve been wanting to make gluten free Carrot Cupcakes for a while now. When I think of spring, I think of carrot cake and when I think of picnics and potlucks I think of carrot cake cupcake yumminess.
