Wheat Thins

Posted on May 24, 2011

When I was a child I loved crackers.  Still do.  I especially loved Wheat Thins.  Can’t have those anymore.  Solution?  I’ve made my own.  These tasty Wheat Thins remind me of the yummy little crackers in the yellow package of my childhood.  The ones my mother bought for parties.  The ones that weren’t gluten free.

That was back in the days before we knew about celiac disease and gluten free living.  Before my mother was diagnosed with celiac.  Before I was ... read more →

Chocolate Cranberry Power Bars

Posted on March 29, 2011

This recipe was adapted from one by Pam Vagnieres‘ in an article called Make Your Own Protein Bars that ran last year in my local newspaper The Daily Camera.  These high protein, gluten free power bars are easy to make and remind me of a Lärabar, though these are super fresh since they’re homemade, and they’re also not quite as sweet.

My boys and their friends loved these bars and gobbled them up during spring break, when our house was boys ... read more →

Spiced Pecans

Posted on November 22, 2010

This recipe for Spiced Pecans is based on one I found in Dorie Greenspan’s book Around My French Table. I am in love with that book and have found so many recipes in it that are “naturally gluten free.”

I had the pleasure of meeting Ms. Greenspan at Blogher Food this year where she and I both spoke on panels. On my panel, we discussed the technicalities of writing a recipe, while the inimitable Dorie (is it too familiar of ... read more →

Chocolate Espresso Power Bars

Posted on March 23, 2010

Vegan Chocolate Espresso Power Bars made with pecans, dates and decaf espresso.

Who doesn’t enjoy a good power bar?  One that is easy to travel with and renders a healthy snack on the go?

These gluten free Espresso Power Bars have a delicious espresso-chocolate-vanilla-ish flavor that makes them equally satisfying as a snack or dessert.  I found mine were just a tad crumbly, you may need to add a dash of water to help yours hold together well.

Vanilla Roasted Walnuts

Posted on December 24, 2009

I’m slightly addicted to these Vanilla Roasted Walnuts and so is my husband.  They have a hint of sweetness and a nice burst of vanilla goodness.  On top of that, Walnuts are a great source of Omega-3’s, have a high antioxidant count and are also beneficial for cardiovascular health.  So I’m on the walnut bandwagon.

Here’s the recipe for another gluten free, tasty, higher protein holiday snack with nuts.

2 cups walnuts, raw
1 tablespoon olive oil

Candied Macadamia Nuts

Posted on November 20, 2009

Here’s another recipe for delicious gluten free candied nuts.  I love making candied nuts for the holidays.  They’re the perfect gluten free dessert, appetizer or snack.  And they make a great gift too.  The homemade version is much cheaper than store bought, tastes fresher and you know exactly what’s in ‘em!

If you love macadamia nuts, you might like to take a look at the recipe for Ginger Macadamia Brownies in my gluten free cookbook, The Gluten-Free Almond Flour Cookbook.  Meanwhile, ... read more →
