Almond Flour Muffins

Posted on April 4, 2011

I have been a huge fan of Michael Ruhlman’s book Ratio for quite some time.  His work really came to life for me when I saw him speak at Blogher Food last year.  He conveys his love of good food in a passionate manner, which I find compelling. So, when my friend Silvana invited me to participate in this month’s Ratio Rally, I said yes, even though I have not really baked using ratios and scales.  I am definitely a numbers […]

Muesli Scones

Posted on March 4, 2011

Did you know that I am obsessed with all things muesli?  I have a recipe for muesli bread in my book, and I make just about everything else I can with muesli.  While traditionally muesli has oats in it, I make mine grain free, as I follow as diet that is very close to Primal/Paleo.

So what exactly is muesli?  According to Wikipedia, it is a “popular breakfast cereal based on uncooked rolled oats, fruit and nuts. It was developed around […]

Cranberry Orange Scones

Posted on February 7, 2011

Once again, it’s all Joy the Baker’s fault.  This scone obsession of mine.  When I saw those cute little hand cut squares of Orange Chocolate Buttermilk Scones on her blog, joythebaker.com, I knew I had to make them mine.  And I did.  And then some.

So, here’s the latest in my scone series, gluten free Cranberry Orange Scones.  As you can see, there is a strange “orangeness” on the top of my scones.  That’s because I had a little extra zest […]

Orange Dark Chocolate Chip Scones

Posted on January 24, 2011

It really is Joy the Baker’s fault.  I have been baking scones every day since I read her post for Orange and Dark Chocolate Buttermilk Scones.  I knew I would have to make my own gluten free version.  So I did.  And it’s scone mania over here.  It’s gotten so bad that last weekend I made 5 batches of scones.  All gluten free of course.

Joy, I wish I was your gluten free neighbor.  And by the way, I do not […]

Pancakes Revisited

Posted on January 26, 2010

These gluten free, grain free and dairy free pancakes are a healthy breakfast treat.

The feedback pertaining to the Pancake and Flapjack recipes on my website has been interesting to watch.

Many people have loved and had great success with these recipes and many have had trouble with them as well.  Since these 2 recipes seemed to be more troublesome then most, I decided to re-work them in this post.

There are several factors to keep in mind:

Don’t cook the pancakes on […]

Cinnamon Bun Muffins

Posted on December 16, 2009

These gluten free muffins taste like cinnamon rolls and make the perfect breakfast treat!

One of my favorite readers Courtney recently suggested that I create a gluten free cinnamon roll recipe. She said it would be perfect for Christmas morning. Being smack in the middle of Hanukkah that wasn’t something I had thought about. Thanks Courtney!

So, here’s my little ol’ gluten free Cinnamon Bun Muffin recipe. I hope you all enjoy it during the holidays.

Lemon Rosemary Mini-Muffins

Posted on October 23, 2009

I’ve been slightly obsessed with rosemary lately.  I put it in everything and just can’t seem to get enough of this delicious herb.   My latest rosemary victim?  Gluten free Lemon Rosemary Mini Muffins made with coconut flour.

I find that rosemary almost has a buttery flavor.  It’s also power packed with nutrients including iron and calcium.  These gluten free muffins are more of an adult treat than something for children.  I’ve been in the mood lately for tasty snacking and dessert […]

Zucchini Chocolate Chip Muffins

Posted on October 16, 2009

For those of you that have leftover zucchini from your gardens, here is a delicious gluten free zucchini chocolate chip mini muffin recipe.  Our garden is just petering out with the severe frost we had last weekend and I need to get going on pulling up all the wilted plants from the yard.

Meanwhile, with this colder weather I’ve been a baking fiend and my family is fully taking advantage of this, loading themselves up with gluten free goodies.

Breakfast Bars

Posted on June 16, 2009

These hearty breakfast bars remind me of a granola bar or an omega-3 packed power bar.  They’re filling and tasty.

After I made a batch of these and was waiting for them to cool before cutting and stylizing them for a “photo shoot,” my younger son proudly taunted me that he had picked out all of the raisins from the top of the bars.

Needless to say, I was quite miffed.  Especially since I have a couple of half gallon jars […]

Mini Blueberry Muffins: Video

Posted on June 1, 2009

Because of all of the requests I have had for more videos as well as for recipes using coconut flour…I have created a short video tutorial using coconut flour.

In this quick and easy tutorial I invite you into my kitchen to be taken step by step through a recipe for mini blueberry muffins. These muffins are mighty tasty.

My children and their friends (who can eat as much gluten as they want) fought over these muffins after I was […]

Lemon Poppy Seed Muffins

Posted on February 20, 2009

We will be making these gluten free lemon poppy seed muffins at my class on March 17th at the Culinary School of the Rockies.  I am sharing the recipe here for those of you that won’t be able to make it.

This is my mother-in-law’s favorite little muffin.  When she came out to visit, I baked a batch and sent them with her so she would have sustenance for the plane ride home.

I like these muffins because they are not only […]

Pumpkin Pie Muffins

Posted on October 17, 2008

These gluten free Pumpkin Pie Muffins are, of course, a favorite of my younger son. When he was little, he ate so much pumpkin and winter squash that he turned a slightly orange hue. Luckily, he’s back to normal now.

I often forget how much I love cooking with pumpkin until fall arrives.  Well, fall is back and I have been using this vegetable with a vengeance.

Flapjacks

UPDATE: Check out my revisited Gluten Free Pancakes recipe!

Baseball is finally over. We lost in the semifinals yesterday to the Rockies. It was a good game; we fought to the end.

This last week, the tournament had virtually taken over our lives with 7 games straight, all during dinner time. This successfully disturbed the rhythm and routine in my household, so I must confess to some relief that the season has come to an end. To celebrate […]

Blueberry Muffins

UPDATE: check out my Mini Blueberry Muffins How-to video!

Blueberry muffins are such a classic little treat. Great for breakfast, an afternoon snack with a cup of tea or even dessert. These Gluten Free Blueberry Muffins, made with coconut flour, are light, fluffy and satisfying.

This is the first coconut flour recipe I have posted. My favorite taste tester (that would be the beloved husband) and I had a conversation last night about my coconut flour recipes during which he gave me […]

Cranberry Lemon Muffins

Posted on February 5, 2008

My favorite taste tester is going on a diet. This is not good news.

This diet deal will require some serious re-inventing of the wheel over here. New standards will need to be implemented. No more –he ate two whole trays of that so it must be good– type ratings.

My favorite taste tester is also my best friend and has been for 16 years. He does not like it when I call him my “partner,” says it makes us sound like […]

Pancakes

Posted on April 6, 2007

My children love these pancakes. High in protein, we eat them for breakfast, lunch and every now and then, dinner.

Here’s an easy recipe for gluten free pancakes. These pancakes are so simple that my younger son makes them from scratch. The high protein ingredients alone in this recipe beat any pancake mix.

My husband and I were talking about pancake mixes last month when we had dinner at one of our favorite restaurants with friends Gary and Nancy. Gary mentioned […]
