Giveaway: The Kind Diet

I’ve been a huge fan of AIicia Silverstone since I first saw her in the teen flick Clueless many years ago. So I was tickled last fall when she featured my Vegan Herb Crackers recipe on her food blog The Kind Life.

Although Silverstone and I do food differently (she is a devoted vegan, I follow a modified Paleo eating plan); I am quite an admirer of how she has used her celebrity to promote social causes. When her publisher sent me a copy of her book last fall, I was eager to both see it and review it. The Kind Diet is not just a cookbook, it is a manual for treading lightly on this planet, something to which Silverstone has devoted her life.

While Silverstone does use gluten in this book, there are many recipes that are naturally gluten free. My favorite recipes are those for a vegan Caesar Salad, yummy Artichoke Dip, a refreshing Pomegranate Lime Iced Tea, Gomashio (a Japanese condiment that I also have a recipe for on this site), and Alicia’s Magical Healing Soup. I also love Silverstone’s recipe for Ume-Sesame Dressing (perfect for those that are not only gluten free, but also on the candida diet).

Even though it is not a gluten free cookbook, there is much goodness in this tome of recipes and I am happy to be giving a copy away today to one lucky winner.     I am definitely not a vegan, but I do love natural foods and much of my diet consists of whole grains, fruits, and vegetables. Roasted Sweet Potatoes, which I learned to cook from a Cooks Illustrated recipe, are one of my absolute favorites – a nice crisp exterior and so creamy and sweet inside!

    I love her book and her positive attitude! My fave vegan foods generally tend to be naturally vegan things…veggie sushi, or any bean-based dish. Yum!

    As a midwest girl through and through, it’s been a revelation to discover that I don’t have to have a meat in order to call the food on my table a meal. Since that epiphany, I’ve enjoyed not only meatless meals, but meatless days. Salads with vinagrette dressings are my go-to for those times. My favorite being a simple spinach salad with strawberries and walnuts with rasberry vinagrette. Yum!

    I love fudge babies and I am ready to make some more. They are better than Larabars, although I’ll eat those on the run when needed!

    I also love Tabouli Salad made with Quinoa, and served with homemade hummus and raw veggies. I am a modified Paleo eater now, so this meal is a rare treat.

    D: Vegetable curry
    D: Coconut milk ice cream – chocolate chip cookie dough or mocha almond fudge!

    I have been wanting a copy of this book since it came out, but I’m too frugal to go and buy it,haha.
    I am not a vegan but I do tend to eat more vegetarian than carnivorous.
    My favorite vegan dish is fried tofu nuggets!! Last time I ate the whole pound by myself!

    Cilantro Smoothie
    Serves: 1
    1 whole fresh mango (peeled and pitted)
    1/2 cup pineapple
    1 bunch of fresh cilantro
    1/2 cup unsweetened almond milk
    1 tablespoon fresh lemon juice
    1 very small knob fresh ginger (peel the bark off of a 1″ piece)
    1/3 cup cold milled (ground) golden flax seed

    Toss all ingredients in a high speed blender until creamy. Drink at once.

    I love the tread lightly idea but am definitely paleo myself. We use solar power, buy locally, garden and reduce/reuse/recycle as well as raise chickens and turkey’s to feed us. An important concept even if veganism does not fit into your idea of healthy eating.

    While I’m not vegan, actually we’re more paleo than anything else, I do enjoy having meatless dishes to lighten things up now and then and this cookbook looks very interesting! My favorite vegan dish I make is a vegetable soup that’s loaded with veggies. So yummy during the winter!

    since being diagnosed with celiac disease over 6 years ago, I have come to appreciate and love all kinds of gluten free and vegan foods. I have learned so much about food and nutrition since becoming gluten free. I also love to support companies and products that have a low footprint on the environment,and many gluten free companies such as Natures Path Organics have such great philosophies behind their businesses.

    one of my favorite gluten free and vegan dishes is brown rice or wild rice bowls mixed with chopped vegetables like tomato, celery, cucumber, red pepper, cilantro and avocado.

I love the recipe you have of the Carrot Fries (I deliberately didn’t look at any of the dessert ones as I’ll start drooling, LOL. Esp. chocolate oriented ones.)     my favorite vegan dish is sweet potatoes, zucchini, red pepper and onions cut into roughly uniform cubes/squares, coated in olive oil, sprinkled with cajun seasoning and grilled…the combination of the sweet and spicy is outstanding and it is so simple too

    my fave vegan meal is veggie stir-fry. it’s the perfect monday night dinner, when you’re trying to get back on track after the weekend and maybe haven’t gone to the store yet. empty all of your leftover veggies into the wok, slap in some grass-fed butter, olive oil, sesame oil and – voila! – a delicious and aromatic meal. with rice, without rice, sometimes with buckwheat soba noodles…it’s good times.

    Of course, I love everything I’ve eaten at this raw vegan cafe near my office – but especially their rawsagna. Zucchini, tomato slices, sundried tomatoes into a paste, pine nut cheese, lots of basil – it’s delicious. As for recipes I make at home, I love making semi-raw cheesecake – I use your pie crust recipe from your Almond Flour cookbook and a cashew cream/coconut oil filling. SO good.

    I’m not a vegan, but I do eat many vegan dishes. I love finding new and creative ways to eat vegetables. One of my favorites is Quinoa Taco Salad (from the Gluten Free Goddess, I hope you understand.) I love Quinoa and love being able to find new ways to make it. My first recipe was one from the Moosewood Recipe Archives for Quinoa stuffed peppers, and I’ve been hooked ever since.

    We are transitioning into a Vegan diet!
    Cant point out one fave recipe.. I like all indian recipes since most of them are already vegan or can be veganised extremely easily..
    All curries, lentil soups, veggie sides, rice and bread!
    Currently i am trying to bake vegan cookies and get them right! so my current fave is my own Chewy Oatmeal Cranberry Vegan cookies!

    I really like green smoothies for breakfast. I just started to do them regularly last week, and I’m about to post my smoothie breakfast recipe this evening.
    I also love vegetable soups… that is one of the things I missed the most when i was a non-cooker, and that is what brought me back to the kitchen

    The best vegan side dish: roasted red bell peppers, peeled and seeded, sliced into strips, and marinated in balsamic vinegar and olive oil. The smokey flavor is amazing. Really delicious on a grilled portabello mushroom burger.

    I loved reading Alicia’s story and getting the facts in a gentle, yet encouraging way, not boasting that this is THE diet for everyone. She even admits that it took her a few times to go completely vegan. I could totally relate to her, plus she’s Cher from Clueless!

    Raw marinated kale salad with raw garlic, lemon juice, olive oil and sea salt. Appeals to both vegans and raw foodists, and even carnivores and children gobble it up when I bring it to potlucks! I could eat an entire bunch of kale in one sitting with this recipe, and often do!

    I grew up loving macaroni and cheese. I thought my days of mac and cheese were over and done with, until one night experimenting, I made the sauce from coconut milk (so delicious unsweeteneed) and Daiya Mozzerella and poured over Tinkayada brown rice pasta shells and oh my goodness…..its a bowlful of yum….

    My favorite vegan dish is pretty simple: fresh berries with cannned coconut milk drizzled over them. My kids were just diagnosed with several allergies/issues, so we’re on both a GFCF and candida eating plan, plus no chicken eggs. This dish is perfect when the kids are feeling glum about our new sugar/dairy/gluten-free lifestyle.

    I read the Kind Diet from the library and it really opened my eyes. I would love my own copy so that I could lend it to people to show them the horrors of the meat industry and how sugar causes chaos in your body.

    My favorite vegan (and gluten free) dish has to be Quinoa, made a million different ways depending on the influence from the rest of the plate. I can make it lean Italian, Indian, all American with a simple change of ingredients.

    I’m very into socca right now. It’s a chickpea flour ‘pancake’ that is naturally gluten-free, and chock full of yummy. Not being a purist, I tend to throw in things that traditional socca makers would probably frown at — sauteed wild leeks or sauteed tomatoes and chili powder. It’s also lovely with nothing more than some black pepper and a pinch of cumin.

    My families favorite recipe comes from a cookbook by Robin Robertson, Spicy African sweet Potato Stew; with slight modification it has even become our favorite sauce over steamed spaghetti squash!

    My favorite vegan lunch is a whole wheat wrap with hummus and tabouli, with plenty of crunchy fresh veggies (as a short-cut I buy the broccoli slaw bag from Trader Joe’s and use that in wraps and salads – its broccoli, cabbage and carrots but all the chopping is done for you) and my favorite vegan snack are Alicia’s brown rice krispy treats – with brown rice syrup, no sugar, they are fantastic. But I’m assuming both those answers will change as I explore more vegan meals. It’s fun to explore new things, and Alicia’s book is a great way to do that.

    I had the chance to quickly browse this book at a friend’s place. It looked inspiring and I’d love to get to know her food and life philosophy closer.

    My favorite vegan dish is my go-to dish for unexpected dinner guests (everyone loves it!) or when I want to cook for the next day at work.

    I get bored easily by eating the same dish too often, but I never get tired of: stir fried tofu with garlic/sesame/ginger/chili, veggies of choice and brown rice noodles. Yum!

    I’ve been living Alicia’s kind diet for 6 months now and love it. I modified it with egg in any baked items. But that’s it. I’m about 95% gluten free since my DH is 100% gluten free. I have a piece of bread once in a while.

    Would love to have the book for my own. Mine is borrowed.

    I am not vegan, but many in my family are allergic to dairy, including myself, so I am always looking for yummy foods that don’t include dairy. I love highly flavorful ethnic foods such as quinoa tabbouleh and hummus. Especially in the summertime, it’s a very refreshing meal. It’s really yummy with Nut-Thins almond crackers too. Mmm-mmm!

    My favorite vegan recipe(so far) was made last night at my cooking class. It was a nut sauce made from hazelnuts, lemon zest and juice, water, pear saki and finished with mint. It was served with steeped carrots and asparagus. Yummy!

    I am certainly not a vegan. I’m a Paleo girl through and through, but I always find myself attracted to the simple, wholesome bars and such that are labeled “vegan”. The ingredients are far more pure and simple than anything else; no nasty additives.
    And as for my favorite vegan recipe, it would actually have to be my own Paleo chocolate chip recipe, which just happens to be vegan and has been a total lifesaver since I gave up grains and just needed a cookie!

    My favourite vegan dish would have to be kitchari, with extra veggies. It’s the dish I always go to when I’m feeling unwell from other foods (such as dairy) and if I’m battling a virus. It’s light, the mung beans provide protein and I always feel better after eating it.

I make a thai vegan soup that doesn’t have the coconut milk in it but uses coconut water and I add the chopped coconut meat for the “noodles” in the soup.     My absolute favorite is so simple. Ice cream. Frozen bananas blended in food processor plus flavor. I love it with strawberries (fresh or frozen) put in at the last minute or peanut or almond butter. Perhaps a sprinkle of cinnamon.

    I am not a vegan also but loooove some of the dishes. One of my favorite vegan dishes is a mock creamy broccoli soup made with homemade chicken stock, frozen broccoli pieces and onion. Boil all until tender, put in a blender, bammm, you have a creamy broccoli soup…awesome!

    I’m so excited about this book! I was vegan for two years and I adored it, but when I was diagnosed with Late Stage Lyme Disease, my doctor asked me to incorporate animal protein back into my diet for a while. I’m currently happy to report though that I’ve gotten the green light to head back toward veganism again, and I couldn’t be more thrilled. My vegan dishes are my all-time favorites!

    My favorite dish is roasted beet chips. It’s simple but so delightfully tasty. Beets sliced paper thin and drizzled in grapeseed oil. So yummy! I learned my roasting ways from you, Elana. :)

    My favorite vegan lunch sandwich is my S&P sandwich (I’m s stock market trader). Try spinach and peanut butter for your S & P. It’s a wonderful combination. I alternate that sandwich with a garbonza bean wrap. Rinsed garbonza beans, carrot, broccoli, celery in a processor pulsed for a couple of times give a chunky mix that can beput in a lettuce leaf or a pita pocket for a great vegan lunch.

    Not a vegan, but I eat a LOT of vegan food. Recently I made a Tuscan white bean soup that was TO DIE FOR. It includes the usual: carrots, celery, onions, fennel, white beans and fresh rosemary. It is just amazingly good each time I make it. You can puree the beans, or keep them whole (I like to do a combo so it has texture). It is so delicious. Alicia’s book looks awesome!

    My favorite vegan recipe is sweet potato/apple soup. It is wonderful comfort food and so filling!
    It is cooked in a veggie broth base and add sweet potatos,fuji or braeburn apples,carrots,onions and at the end add cinnamon(i use quite a bit!)
    Ahhhh, heaven and it makes your whole house smell amazing!!!!
    Then IF you have room for dessert, baked peaches with brown sugar and topped with almond flour…mmmmmm…I’m hungry! ;)

It is gluten free, vegan 5 layer dip (which I used as taco filling in sprouted corn tortillas.     I followed a vegan diet for about 8 years and although I now eat a more moderate diet I still regularly cook and eat vegan dishes. One of my favorite vegan recipes is an extremely easy to make banana bread which I modified into a vegan and gluten free recipe many years back. My fiance absolutely loves when I bake this bread and because it is so super easy and delicious I want to share it with you here.

    3 very ripe bananas
    1/3 cup of honey or agave
    1 2/3 cups flour – Bob’s Red Mill Gluten Free flour
    1/2 tsp salt
    1 tsp baking soda
    2 Tbsp virgin coconut oil
    3/4 cup chopped nuts (optional)
    1/2 cup chopped vegan chocolate chips (optional)

    Heat oven to 350 degrees F. Puree bananas in a food processor or mash with a fork and then add the honey or agave and continue to blend. Sift the flour, salt, and baking soda together in one bowl. Add the flour to the banana mixture and stir. Then add the coconut oil and nuts/chocolate if using.

    Use coconut oil to grease a round 9 inch pan and bake for about 40 minutes. Check to see if bread is finished by inserting a toothpick. Keep the middle slightly moist.

    A few years ago I had a miscarraige from an unplanned pregnancy. My husband and I were not trying for children, so then after we lost one I was devestated. From there I lost motivation to keep myself up. I haven’t been depressed, I just didn’t care about keeping my body in shape.     I am not a vegan – I eat fish and eggs – but I try to buy local, organic, and sustainable food and plants make up the majority of my diet. Pretty much all of my favorite foods are vegan: Roasted sweet potatoes with toasted pecans, granola sweetened with carob and served with almond milk, and this time of year grilled vegetables (onions, asparagus, zucchnini, artichokes, eggplant, etc). Of course, nothing beats fresh baby greens tossed with olive oil and balsamic vinegar!

    In our house, there are many. Tostadas (without the cheese, it’s vegan) with Spanish rice and refried beans – and my own homemade salsa – makes everyone the happiest. I’m personally quite fond of falafel and hummus, and I love using tofu in our meals. And I can eat loads of kale.

    Basically, any dish that is made using whole, healthful foods would get my vote these days.

    My husband & I were vegan for about 6 months & really enjoyed living that way, but it was very difficult & something we just couldn’t maintain during such a busy point in our lives. We still make a handful of vegan dishes though & I’d say my favorite is the vegan “sour cream” enchiladas: a ton of roasted veggies, some roasted chiles, a ton of cilantro & green enchilada sauce. So yummy!!! We’ve made it for all our meat-eating friends & family & it gets praise from just about everyone.

    My favourite vegan dish is green salad with homemade sprouts and homemade balsamic vinegar. Variety of lettuces, cos, kale, spinach, butter lettuce, mixed green leaves. Then I sprout mung beans, dulse, sesame seeds, chickpeas, lentils. Balsmic vinegarette: balsamic vinegar, olive oil, flaxseed oil, then I grab a leaf of all different heabs finely chop and sprinkle. The sprouts give it density, and the different herbs make is aromatic!! Yum!

    My favorite vegan recipe is a marinated bean salad. It’s so versatile. It can be eaten by itself. You can grind it in the food processor and make it a dip. You can add Veganaise to it and serve it warm over GF pasta. Serve it over baked potatoes. Endless possibilities and yummy!

    1. Raw Key Lime Pie. It’s full of healthy fats, vitamin C and lots of nuts and fiber.
    2. Gluten-free, vegan lemon coconut cookies. Lots of fiber, healthy fats, and good enough for my meat-eating, conventional friends.
    3. ANY roasted vegetable.

    My family’s favorite vegan food is raw borsht. We use a recipe from Gabrielle Chavez and Victoria Boutenko’s The Raw Food Gourmet. We substitute homemade raw craut [made from body ecology starter] for the plain cabbage. If you are really short on time it’s the perfect thing to whip up.

    My favorite vegan dish is Julia Child’s ratatouille recipe. All the different vegetables have their own lovely tastes and textures. My mother never liked eggplant until she had this dish. Cooking the vegetables separately is key as the vegetables cook at different rates. The beauty is the culmination of when they are combined. The only changes I make are to use red bell pepper instead of green and to include herbs de provence. It definitely is a labor of love.

    My first alternative introduction to vegan principles and recipes began fifteen years ago when a friend accidentally left a book at my house after an afternoon visit. John Robbins ‘Diet for A New America’ changed my life…. one of my favorite cruelty and gluten free recipes is his peanut sauce, which I serve over broccoli and or Tinkyada brown rice spaghetti. I substitute almond or cashew butter, and I use this as a “treat” meal since I can’t eat nuts very often. More recently I have discovered ‘The Body Ecology Diet’ by Donna Gates, helping me tremendously with the lifestyle changes I needed to overcome reoccurring candidiasis. Her Creamy Cauliflower Soup is a staple in my diet- it’s alkaline, nutritious and an incredibly satisfying addition to a meal or as a stand alone soup year round. The “creamy” part just means pureed -no need for milk!

    My favorite vegan recipe is Beet Burgers from Color Me Vegan by Colleen Patrick-Goudreau. All of her recipes/vegan info. from The Vegan Table, The Joy of Vegan Baking and Color Me Vegan are loaded with absolutely delicious vegan fare. Officially a vegan for just over a year, this has been the BEST time of my “cooking life” exploring new ingredients,seasoning, textures and freedom to look at food preparation and planning in a brand new way. That says a lot because I am 57 years old and have always considered cooking an art form: whether it was for my family, entertaining friends, or trying new recipes. This lifestyle change was influenced and informed by my four adult children; three vegans and one vegetarian… great is that!! Even my carivore husband has become”veganist”; when he is with me, at any rate.

    My favorite recipe is for carrot fries. I have been Gluten-free for 5 years now but just recently have been put on a corn and potato-free diet in addition to GF. French fries were one of my favorite foods so this a a great (and a much healthier) substitution!

    My favorite Food: Deborah Madison’s Greens & Potatoes. I make my own version now–boil potatoes in a pot, steaming Kale above. Then saute onion/garlic/leek (whatever allium came in the CSA box for the week except red onion) in olive oil, add the Kale and potatoes. If the potatoes are starchy, mush them up like a hash. If they are fresh-dug, leave them in bite-sized pieces. Somehow it tastes different every time!

    My husband and I made grilled chickpea sandwiches (to replace grilled cheese) with tomato soup last night and LOVED IT. Since we’re new to the diet we’re slowly adding new and tasty recipes.     My favourite vegan item is salad made up of arugula, spinach, boston lettuce, fennel with hemp seeds and or/chia seeds with a lovely vinaigrette: grapeseed oil + toasted sesame seeds oil + apple cider vinegar + smoked paprika + sea salt + turmeric. Very good! AND…your pumpkin custard – using agar agar instead of gelatin!

    I have considered going vegan for quite some time now. I have fibromyalgia and a lot of stomach problems. I probably would have switched earlier but my husband is a true carnivore and has to have his meat! Unfortunately he is very overweight and has diabetes. I would like to cook good vegan recipes so that we could both work our way back to better health. I started cooking with “Recipes For A Small Planet” back in high school, so have always leaned towards vegetarian. Hmmm…favorite recipes? So many…Thai peanut sauce over udon noodles, Butternut and sweet potatoe soup, Green soup, Salad greens with craisins, walnuts and raspberry vinegrette. Thanks for sharing all you do.

    I am a huge cheese fan, but unfortunately lactose intolerent. Just recently I discoved a vegan nacho cheese recipe that is actually GOOD! Cashews, red pepper, nutritional yeast, etc. Yum! I used it on kale chips (dehyrated).

I have so many favorite vegan meals, it’s difficult to choose just one, but if I had to choose one that would satisfy the pickiest of eaters, it would be iri dofu.     This is my favorite! It’s a recipe a came up with for my vegan daughter! So yummy!

    Sweet Black Beans and Rice
    (Michelle Millburn)
    2 c cooked brown or Jasmine rice
    1 can black beans – drained and rinsed well (or 2 cups cooked from dry)
    1 medium sweet Vidalia onion, chopped
    3 small, tart apples, chopped
    1 can light coconut milk
    2 T canola oil
    1 – 3 t red curry (to taste)

    Cook onion on medium low heat in canola oil until caramelized (sweet and translucent). Add apples and cook until just tender (I like a little bit of crunch ) Turn to low and add beans and rice. Mix curry into milk and pour over rice and beans mix, mixing gently.  Cook until bubbly and warm through.  Serve in a bowl with spiral slices of fresh apple on top and garlic pita chips and a mixed green salad on
    the side.
