These lightly sweetened dairy-free fudgsicles are a major hit with my chocolate loving teenage son. He’s been devouring them this summer, eating a couple a day. I like homemade fudgsicles too as they’re low-carb and sweetened with only one date (in an entire batch of six).

This Coconut Chocolate Chip Ice Cream is the perfect refreshment for a hot summer day. Since every child in the neighborhood seems to be at my house at present, bouncing on our trampoline, it is going to make the perfect afternoon snack in a few short minutes.
It’s fun (and super easy) to make dairy free ice cream from coconut milk. Low in sugar, and high in protein and good fat, I feel great about feeding it to the gang.

Summer is definitely here and our house is the place to be. The neighborhood boys congregate on our trampoline –with the sprinklers aimed at it for a good cool down and a great deal of healthy fun.

I was thrilled to have the darling Kelly and her adorable family over for dinner during one night of Hanukkah a couple of weeks ago. Let us now praise all things pumpkin. I’m kinda obsessed with gluten free, dairy free pumpkin dishes right now, hence the vegan Pumpkin Ice Cream here, and the Pumpkin Bars earlier this week. And let us not forget the Pumpkin Pie Muffins of last year either.

Peaches are in high season here in Colorado and we are making the most of it. This week I made a gluten free (of course), fruit sweetened, dairy free, vegan Peach Almond Ice Cream.
To increase the peach factor, I diced up more fresh peaches and mooshed them into the ice cream after it came out of the ice cream maker.

My boys love this vegan Strawberry Ice “Cream.” I made a batch and it was gone in a couple of hours. So I made more and my husband got in on the act, consuming his share.

This is my favorite ice cream. It’s vegan. It’s vanilla. And it’s yummy.
I’ve been making this ice cream for the last couple of years. Way back when in my New York days, my raw food friends turned me on to the fact that cashews make an amazing substitute for dairy.
